Ingredients:
- 2 salmon fillets (6 oz each)
- 1 tablespoon honey
- 1 tablespoon fresh ginger (grated)
- 2 tablespoons soy sauce or coconut aminos
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 medium sweet potato (cubed)
- 2 cups fresh spinach
- 1/4 teaspoon sea salt
- 1 tablespoon sesame seeds (for garnish)
- Lemon wedges (for serving)
Instructions:
- Marinate the Salmon:
- In a small bowl, mix honey, grated ginger, soy sauce, garlic powder, and black pepper.
- Coat the salmon fillets with the marinade and let sit for at least 15 minutes.
- Roast the Sweet Potatoes:
- Preheat oven to 400°F (200°C).
- Toss cubed sweet potatoes with 1/2 tablespoon olive oil and sea salt, then spread on a baking sheet.
- Roast for 20 minutes, flipping halfway through.
- Cook the Salmon:
- Heat 1/2 tablespoon olive oil in a pan over medium heat.
- Add the salmon fillets and cook for 4-5 minutes per side, until golden brown and flaky.
- Sauté the Spinach:
- In the same pan, quickly sauté the spinach for 1-2 minutes until wilted.
- Assemble & Serve:
- Plate the salmon with roasted sweet potatoes and sautéed spinach.
- Sprinkle with sesame seeds and serve with lemon wedges for added freshness.
