Ingredients:

  • 2 salmon fillets (6 oz each)
  • 1 tablespoon honey
  • 1 tablespoon fresh ginger (grated)
  • 2 tablespoons soy sauce or coconut aminos
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 medium sweet potato (cubed)
  • 2 cups fresh spinach
  • 1/4 teaspoon sea salt
  • 1 tablespoon sesame seeds (for garnish)
  • Lemon wedges (for serving)

Instructions:

  1. Marinate the Salmon:
    • In a small bowl, mix honey, grated ginger, soy sauce, garlic powder, and black pepper.
    • Coat the salmon fillets with the marinade and let sit for at least 15 minutes.
  2. Roast the Sweet Potatoes:
    • Preheat oven to 400°F (200°C).
    • Toss cubed sweet potatoes with 1/2 tablespoon olive oil and sea salt, then spread on a baking sheet.
    • Roast for 20 minutes, flipping halfway through.
  3. Cook the Salmon:
    • Heat 1/2 tablespoon olive oil in a pan over medium heat.
